    Ingredients
    Instructions
    1. In a large bowl combine all dry ingredients and lightly mix.
    2. Warm the coconut oil in the microwave until just melted.
    3. Whisk all wet ingredients except the almond milk in a small bowl.
    4. Add wet ingredients to dry and mix until almost combined. Let sit for two minutes.
    5. Spray a pan with non-stick and heat to just below medium. While the pan is heating, whisk in the almond milk to the batter and mix until fully combined.
    6. Use an ice cream scoop to portion out the pancakes and a spatula to press them down into shape.
    7. Cover and let cook roughly ten minutes. Flip the pancakes, re cover and cook an additional 4-6 minutes until cooked through. Keep a careful eye on them after the last three minutes to ensure they don’t burn.
    8. Top with maple syrup and more coconut flakes if desired.
