Real Food Toasted Coconut Trail Mix {paleo & vegan}
Trail mix is the perfect on-the-go snack. It’s great for road trips, hiking, camping, pool days, and as an afternoon pick-me-up at home.
Most store-bought trail mix is loaded with sugar and industrial seed oils. Both contribute to inflammation. Since inflammation is the root of so many diseases, we want to avoid these ingredients as much as possible.
Thankfully, homemade trail mix is so easy to make — it’s ready to eat in no time!
As you probably know, trail mix is simply a combination of nuts and dried fruit, with some optional add-ins. This vegan, Paleo, and Real Food Toasted Coconut Trail Mix recipe has nuts and seeds as the base and merges the tartness of goji berries with the sweetness of chocolate and raisins.
Then, toasted coconut chips elevate this trail mix to gourmet status!
Real Food Toasted Coconut Trail Mix
Even though I’m giving you a recipe below, feel free to adjust according to your taste. If you’re not a fan of sweet (or are trying to cut back on sugar) leave out the raisins and chocolate chips. If there’s a nut you don’t care for, swap it for a different variety.
This Real Food Toasted Coconut Trail Mix is superior to most available in stores because it’s made with Wildly Organic’s soaked and dehydrated nuts.
Soaked nuts are much more nutritious than their unsoaked counterparts. You can soak and dry them yourself, but Wildly Organic makes it so easy by doing it for us! Using these soaked and dehydrated nuts and seeds saves time and also means you get all the nutrition available when you eat this trail mix.
I prefer a natural (unroasted) trail mix, and have written the recipe as such, but if you’d like to add some roasted goodness, roast the almonds (and possibly cashews) for about 10 minutes at 350 degrees F.
If you choose to roast the nuts, I recommend buying the unsoaked, raw variety (which Wildly Organic also carries). You might also enjoy tossing the roasted nuts in a pinch of Himalayan Pink Salt while warm to add some extra saltiness to your trail mix.
Besides being an excellent portable snack, this trail mix is delicious sprinkled over yogurt, ice cream, oatmeal, smoothies, and more.

- 2/3cup Wildly Organic Soaked & Dried Pecans
- 2/3 cup Wildly Organic Soaked & Dried Almonds
- 1/2cup Wildly Organic Soaked & Dried Sunflower Seeds
- 1/2cup Wildly Organic Soaked & Dried Pumpkin Seeds
- 2/3cup Wildly Organic Soaked & Dried Cashews
- 1/4cup Wildly Organic Goji Berries
- 2/3cup Wildly Organic Soaked & Dried Walnuts
- 1/4cup raisins
- 1/3cup chocolate chips
- 1cup Wildly Organic Coconut Chipstoasted

Preheat oven to 300 degrees Fahrenheit. Spread coconut chips in a single layer on a parchment-lined baking sheet.

Bake for about 5 minutes and stir briefly. Coconut chips may need an extra 2 to 3 minutes, but you must keep a close eye on them as they can burn very quickly. Remove from oven and set aside to cool.

While coconut is cooling, mix the nuts in a large bowl.

Add in the toasted coconut and combine.

Add the dried fruit and chocolate chips and stir to combine.

Store in an airtight container.
