A big bowl of hearty Whole30® Cacao Beef Chili is the perfect dish for a cold winter’s night. Actually, who am I kidding, beef chili is pretty delicious during the summer months too!
One of my favorite things about making chili is that it is quick and easy so I can get dinner on the table in no time with minimal effort. In fact, it’s one of the recipes I’m teaching my older kids to make.
Because it’s so simple to make, this no-bean beef chili is a great weeknight meal. It also freezes well, so it’s a wonderful addition to your weekly meal preparation routine. Make a big batch of this Whole30® beef chili and you’ll be ready for many meals to come.
Whole30® Cacao Beef Chili Recipe
This cacao beef chili is paleo and Whole30® compliant. Though, if you want to stretch it to serve more meals and you are not adhering to a Whole30® or paleo diet, feel free to add beans. Both pinto and blank beans work well in this easy chili recipe.
If you’ve never added Wildly Organic Cacao Powder to your chili, you are in for a treat! Cacao powder imparts a wonderful depth of flavor and pairs beautifully with tomatoes and ground beef.
If you’d like to branch out from the regular corn chips and sour cream accompaniment to chili (and you’ll need to if you are on the Whole30® diet), serve this cacao beef chili with a side salad, over spaghetti squash, or atop a baked sweet potato for a complete meal.
Easily increase the number of veggies in this cacao chili by adding sliced bell peppers, chopped zucchini, and shredded carrots along with the onions. It’s also sometimes nice to add a few cups of baby spinach towards the end of simmering.
Serve this no bean Whole30® and paleo cacao chili to your non-Whole30 and paleo friends and they will be none the wiser. It’s so hearty and satisfying, no one will miss the beans!
The recipe below provides instructions for cooking this chili on the stove top, but you could certainly brown the meat and onions, then add to the slow cooker along with the rest of the ingredients. Cook on low for about 6 hours in your slow cooker.
