No-Bake Chocolate Coconut Macaroons {Gluten-Free, Vegan, Paleo}
Is there any better flavor combination than chocolate and coconut? These tasty no-bake macaroons have just the right amount of sweetness and a whole lot of flavor. Store in the fridge for an extra-cool and refreshing summer pick-me-up.
When creating this recipe, I wanted something sweet that didn’t involve turning on the oven. We all know how much the oven heats up the kitchen during the summer!
I also really wanted to make these treats bite-sized. I wanted one or two to satisfy my sweet tooth, without the need for a full dessert.
After a little trial and error, I believe I succeeded on both fronts. Mission accomplished!
No-Bake Chocolate Coconut Macaroons
With just 6 healthy ingredients, these no-bake chocolate coconut macaroons will be a staple in your house this summer. So easy to make and full of real food ingredients like cacao, coconut syrup, coconut flakes, almond flour, and coconut oil. You’ll feel good about serving these tasty treats to your kids!
And guess what? They’re so easy to make! One bowl, 6 ingredients, and 5 minutes. That’s really all you need! Kids would love to help out in the kitchen making these tasty treats!
The recipe is adaptable, so feel free to adjust as needed. I did not try it, but I think a few teaspoons of chopped goji berries would be a wonderful addition as well. You could also substitute part of the almond flour for another fine groundnut. Can you even imagine how good these no-bake chocolate coconut macaroons would taste dipped in chocolate? Oh, the possibilities!
Ingredients with Benefits
Even though I didn’t think too much about the health benefits of these macaroons when making them, they do have quite a few health-enhancing ingredients!
For example, cacao powder is a great antioxidant (read about the health benefits of cacao here). I used non-fermented raw cacao powder, but if you like an even darker chocolate flavor, try the fermented raw cacao. Not sure? The inclusion of Wildly Organic coconut oil in this macaroon recipe also brings some benefits. Coconut oil is the best whole food source of MCTs (medium-chain triglycerides), which are thought to speed up metabolism and help burn fat.
Because we use Wildly Organic’s coconut syrup to sweeten these macaroons, they have extra minerals which wouldn’t be present if we had used white sugar or corn syrup. Coconut syrup is also lower on the glycemic index (GI) than white sugar. This means it is digested and metabolized more slowly, which results in less strain on blood sugar levels.
Another benefit to these yummy treats is the fact that they are so easy to make. This means you can whip them up in just a few minutes (and you only need one bowl to do it!). Because of their simplicity, these chocolate macaroons would be a great no-bake cookie to make with kids.

What’s your favorite way to use coconut flakes in desserts?
- 1cup Wildly Organic Coconut Flakes
- 1-1/2tablespoons Wildly Organic Cacao Powder
- 1/2cup Wildly Organic Almond Flour
- 1/8cup Wildly Organic Coconut Syrup
- 1/8 cup Wildly Organic Coconut Oilmelted
- 3/4teaspoon vanilla

In a large bowl, mix together coconut flakes, cacao powder, almond flour, coconut syrup, coconut oil and vanilla until well combined.

Use a tablespoon or small cookie scoop to measure approximately 1 tablespoon of mixture and shape into a ball.

Place in an airtight container and store in the fridge.
