No-Bake Fudgy Frosted Coconut Bites {Gluten-Free, Dairy-Free, Vegan}

It’s a hot summer day and you want a sweet treat. You don’t want to heat up the kitchen, either. What can you do? Make these super easy no-bake fudgy frosted coconut bites! Full of coconut flavor and chocolate goodness, these fudgy frosted coconut bites are a great treat the whole family will love! The best part is they’re no-bake and on the table in under 20 minutes. What else could you want when you’re looking for a quick and easy sweet treat?

Fudgy Frosted Coconut Bites

Crunchy, slightly bitter raw cacao nibs give these coconut bites both texture and good-for-you minerals. The rich fudgy frosting balances out the cacao nibs, too.

You’ll want to keep these little gems in the fridge or freezer, at room temp – especially on a hot summer day – they’ll be quite soft and may fall apart easily. Of course, if you’re like me there’s about half a second of opportunity for that to happen.

These fudgy frosted coconut bites are delicious with coffee. In fact, I’m eating one for breakfast as I type this. And, my family loved them too! My husband thinks he doesn’t like coconut, but I’m slowly winning him over with these coconut bites and the Coconut Lime Kefir Pops from last month.

Getting the healthy goodness of coconut into my growing kiddos is definitely a win. The only drawback is having to share my coconut treats!

Tips for Enjoying No-Bake Fudgy Frosted Coconut Bites

  • Keep these in the freezer so they don’t melt during warm days. Also, you will always have a treat ready for you in the freezer when your sweet tooth kicks in!
  • To easily remove the coconut bites from the pan, line the baking dish with wax paper and ensure that there are an extra few inches of wax paper hanging over the pan. After refrigerating the bites, just lift the wax paper out of the pan to slice and eat. Easy clean-up too!
  • The frosting is quite rich and not much is needed if you decide to individually frost each bite. However, if you wish to frost the whole pan and then slice, double the frosting recipe to make sure you have enough.

    Ingredients
    For the Fudgy Frosting
    Instructions
    Make the Coconut Bites
    1. In a mixing bowl, beat together the coconut oil, coconut butter, and vanilla until creamy.
    2. Add the coconut syrup, coconut sugar, salt and beat well.
    3. Stir in the shredded coconut and optional cacao nibs.
    4. Line an 8 x 8" baking dish with a sheet of waxed paper, allowing enough length to lift the coconut mixture out after refrigerating.
    5. Press the coconut mixture evenly into the wax paper lined baking dish. The lid to the WO Coconut Oil works great for this.
    6. Refrigerate for around 10 minutes, or until firm.
    7. Cut into 16 squares and frost with the Fudgy Frosting (below).
    Make the Fudgy Frosting
    1. In a mixing bowl, beat or whisk together the coconut sugar, coconut butter, cacao powder, and nut milk until smooth and creamy.
    Recipe Notes

    The frosting is rich and not much is needed if you frost the coconut bites individually. If you want to just frost the entire thing then cut, double the amount of frosting.
