I’m a big fan of recipes that require placing everything in a pot and stirring. This pumpkin spice candied almonds recipe is one of them. If you’ve never candied nuts before, it’s quite simple. All you do is add your sugars and spices to a pot and heat until melted. Add in your nuts and stir for 3-5 minutes until the nuts are coated in the sugar mixture and all moisture is evaporated. Then, pour it out onto a baking sheet and let it set for at least 30 minutes. Does it get any easier?

I’ve made candied nuts for as long as I can remember, but it was about time I made a pumpkin spice variety! You can use store-bought pumpkin pie spice, but I think it’s just as easy (and cheaper!) to make it yourself at home. All you need is cinnamon, ginger, cloves, and nutmeg. The result is the most amazing smelling aroma ever! You’ll want to make these almonds all the time to keep your kitchen smelling this delightful!

If you aren’t a fan of pumpkin spice, feel free to substitute by using all cinnamon. You’ll still end up with a great snack! Sweet and crunchy, these pumpkin spice candied almonds are seriously addictive! Tips for Making Paleo Pumpkin Spice Candied Almonds

  • This is such a versatile recipe. We used almonds, but Wildly Organic pecans or cashews, too!
  • Keep stirring until all the moisture evaporates, at least 3 minutes. You want to make sure the sugar is able to reach a high enough temperature to reach the “brittle” stage. If it doesn’t, your almonds will end up sticky and not have a hard shell.
  • Make sure the almonds don’t burn. Turn the stove to medium-low heat and continuously stir the almonds to prevent burning.
  • You can store the candied almonds in an airtight container at room temperature for 1-2 weeks.

    Instructions
    1. Line a baking sheet with parchment paper or a silicone mat. Set aside.
    2. Preheat a small saucepan over medium low heat.
    3. Add coconut sugar, pure maple syrup, and coconut oil to the saucepan. Stir until melted and smooth.
    4. Quickly add cinnamon, ginger, cloves, nutmeg and salt and whisk or stir well to combine.
    5. Add almonds and stir to coat. Continue stirring constantly for 3 to 5 minutes, until the moisture has evaporated and a thick syrup is covering the almonds.
    6. Pour almonds out onto the prepared baking sheet and immediately spread the nuts out into small clusters.
    7. Let set completely.
