Hot Chocolate Brownies {Grain-Free, Dairy-Free, Paleo, Gluten-Free}
If you’re looking for a decadent, chocolate dessert this season, look no further than these hot chocolate brownies! They’re ooey, gooey, and packed with chocolate flavor. Even better, they’re grain-free, dairy-free, and paleo.
Hot Chocolate Brownies Recipe
Brownies to me always meant opening a box. Over the years we switched to an organic, gluten-free boxed mix, but it’s still really high in sugar. I’ve tried too many grain-free from scratch brownie recipes to count and they always fell flat. Frustrated, I always fell back on my old stand-by of box mix brownies. However, after experimenting with some of the Wildly Organic Hot Chocolate Mix, it’s time to ditch the box for good! The resulting brownies are naturally sweet, paleo-friendly, and taste absolutely delicious!
If you haven’t tried using this hot chocolate mix before, you are in for a treat! It’s made with only 3 ingredients: raw, organic fermented cacao powder (Fair Trade certified!), dairy-free organic coconut milk powder, and organic coconut sap sugar. That’s it! It can be used so many ways – from a quick, hot mug of cocoa to these delicious paleo hot cocoa brownies!
Do you like your brownies chewy or cakey? There is a strong line in the sand between the gooey, chewy brownie camp and the cakey brownies camp. These hot chocolate brownies are firmly on the chewy side of that line. To me, if a brownie is cake-like, then it’s cake, not a brownie. If you want these brownies to be gooey though, be sure to not overcook them. They should still look a little underdone in the center and will firm as they cool. If a fork inserted in the center comes back with raw batter on it, then they’re not quite done yet.
I started out trying to keep this recipe as simple as possible with only a few ingredients. While they’re still simple, you may notice some repeat ingredients and wonder if you really need to add that. The answer is yes. While the cane sugar from the hot chocolate mix gives a cup of hot chocolate a subtly sweet flavor, it’s not enough when baked into brownies. Without the additional honey the brownies aren’t sweet enough, and are too dry and cakey. No one likes dried out cake, or at least most of us don’t.
I also added some additional cocoa powder. This gives the brownies a more intense chocolate flavor and is a good substitute for some of the wheat flour in a traditional brownie recipe. When added together, the ingredients form a symphony of chewy, chocolate, brownie goodness.
These grain-free chocolate brownies would be a hit at any holiday gathering. Top with a drizzle of Wildly Organic Chocolate Syrup and a sprinkle of Wildly Organic Hot Chocolate Mix for an extra treat. Trust us, these ooey, gooey, chewy hot chocolate brownies won’t last long on the dessert table!
