Paleo Double Chocolate Berry Crepes

Paleo Double Chocolate Berry Crepes

There’s just something so special about spending a little extra time in the kitchen on the weekends to make a brunch meal that the whole family will love. If you love a stack of paleo coconut pancakes for breakfast, then you’ll be in for a treat with these paleo double chocolate berry crepes. They’re grain-free, paleo, and full of chocolate flavor. Although I’m in love with the decadent chocolate and strawberry combo, these crepes also taste good with raspberries.

My family eats a lot of eggs for breakfast since we avoid most grains. While eggs are healthy and versatile options, sometimes I want something different. Most breakfast options are full of refined sugars (I’m looking at you donuts) or take forever to make. With two little ones and busy days sometimes I want a breakfast that’s fairly quick and easy, yet still decadent. These chocolate berry crepes fit the bill!

Paleo Double Chocolate Berry Crepes Recipe

Traditionally, crepes are made with wheat flour, which gives dough elasticity so the finished crepes are easy to fold and hold together. Since these are paleo crepes, we’re using a blend of grain-free powders to achieve the same effect!

Cocoa powder is finely ground like wheat flour, but it also gives these a nice chocolate flavor. Drizzled with chocolate syrup, these paleo crepes are getting double the double flavor in this recipe!

I chose almond milk for these because it has less fat than canned coconut milk. While both almond and coconut milk are dairy-free, too much fat in the batter makes for gooey crepes. If all you have is coconut milk in a carton though (NOT canned), then that should still work. Grass-fed milk, cashew, or other milk alternatives will work too, but I wouldn’t use canned coconut milk.

Topping Ideas for Paleo Crepes

These crepes are delicious with just the chocolate sauce, but here are some other topping ideas for even more flavor!

No matter which toppings you choose, these paleo double chocolate crepes will be a hit with your family!

    Ingredients

    • 2cups frozen berriesStrawberry or raspberry work well
    • 1TBSP Wildly Organic Coco Monkey Sweeteneror more to preference
    • 2-3tsp arrowroot powderraspberries need the larger amount
    • 2TBSP cold water
    • 1/2tsp vanilla extractoptional
    Crepe batter
    Instructions
    Filling
    1. Place the berries in a saucepan and cook over medium-low heat, stirring ocassionally until softened, about 10 minutes.
    2. In a small bowl mix together the arrowroot powder, coco monkey sweetener and cold water until dissolved. Add the mixture to the softened berries, stirring constantly.
    3. After the filling has thickened to the desired consistency, about 1-2 minutes, turn off the heat. Add the vanilla if desired.
    Crepes
    1. Heat a well-greased skillet over low heat. There should be enough oil for the crepes to not stick, but not so much they fry.
    2. Whisk together the dry ingredients.
    3. Stir in the eggs, milk, and vanilla.
    4. Use a 1/4 cup to scoop out the batter and spread it into the hot skillet. You want a thin coating so it cooks through, but not so thin it tears. The batter will be thick and needs spread out with the side of the measuring cup or a rubber spatula.
    5. Cook the crepes for about 1 minute on each side with the lid on over low heat.
    6. Place a few spoonfuls of the berry sauce in the center of the crepe and roll it up. Make sure the crepe seam is on the bottom so it doesn't unroll.
    7. Drizzle liberally with chocolate sauce and add toppings if desired.
